Spinach-Roquefort soup

With such a Siberian cold outside, I love to have a cosy weekend at home! Some very brave friends came for dinner though, so I really wanted to take care of them and give them as much comfort as possible! Last week, when I thought about the menu, my first idea was to make a spinach salad, but with such terrible cold, I turn the salad into a creamy and cosy soup!

Ingredients for  6 persons:
- 500 grs. of fresh spinach
- 100 grs of Roquefort
- 200 ml of heavy cream
- 1 vegetables broth tablet
- 3 cloves
- Nutmeg, salt and pepper

Clean well the spinach leaves, they always have some sand and it is not nice to bite it!
In a big pan, put together the spinach with 1 liter of water, the broth tablet, cloves, nutmeg, salt and pepper and let cook for 20 min at medium heat.

Once the soup is cooked, mix it together with the Roquefort cheese till getting a soft cream. Add the cream and let it melt into the soup and put it again at low heat for 10 more minutes in order to get a heavier texture.

The soup is ready! You can serve it with some crumble of Roquefort and nuts on top for a nice decoration! The strong taste of the Roquefort is balanced with the cream which is itself balance with the fresh spinach taste!
