Fruity Gazpacho Festival

Let me share with you some new and innovative recipes of gazpachos! I love gazpacho because it is easy and quick to prepare, it is refreshing and healthy,... but above all, it is delicious!!!!
I already gave you some recipes for the traditional Spanish gazpacho and a Spanish watermelon version.
Let me share with you today 2 new versions that will get you crazy this summer!

Strawberry Gazpacho

Ingredients for 4 persons:
- 300 grs of cucumber
- 2 ripe small tomatoes
- 300 grs. of strawberries
- 8 basil leaves
- 6 tsp. of olive oil
- a shot of balsamic vinegar
- 1 small garlic clove
- salt and black pepper

Wash the strawberries and take off the stem. Cut them in pieces. Peel the cucumber and take of the seeds inside. Slice in chunks. Cut the tomatoes and take off the seeds inside as well.
Put together all the ingredients in a mixer, add the oil, the basil leaves and salt and pepper.
Mix well till the gazpacho gets smooth. Keep the gazpacho in the fridge till you serve it.

I love the mix of the freshness of the cucumber, the sweetness of the strawberry. Then, the olive oil and the basil gives a complex taste. The balsamic vinegar and the pepper will enhance the strawberry taste,... just delicious!!!!

Watermelon gazpacho

Ingredients for 4 persons:
- 300 grs of cucumber
- 1 ripe small tomato
- 300 grs. of watermelon
- 6 tsp. of olive oil
- a shot of raspberry vinegar
- 1/2 small garlic clove
- salt and black pepper

Peel the cucumber and the watermelon. Wash the tomato. Take off the seeds inside of the tomato and cucumber. Cut all the ingredients in pieces. Do the same with the garlic.
Put together all the ingredients in a mixer, and add the olive oil, the vinegar, salt and pepper. 
Mix very well till the gazpacho gets smooth. Keep in the fridge and serve with a piece of watermelon and fresh mint leaf. The taste of the watermelon is just perfect for a hot summer lunch,.... and the taste of the raspberry vinegar finishes the fruity and fresh taste! delicious!!!!
