Chocolate Sponge Cake
This chocolate cake recipe is a mix of brownie and sponge cake. The texture is light and smooth like a sponge cake but the taste and the nuts makes evil a luxurious like a brownie!
 
- 250 grs of 70% cocoa chocolate
- 125 grs of butter
- 5 eggs
- 1 pinch of salt
- 75 grs. of raw sugar
- 50 grs of wheat flour
- 75 grs of nuts (pistachio, hazelnuts and walnuts)

Turn on the oven at 180ÂșC.

In a pan put together the butter and the chocolate cut in pieces and melt at very low heat for 5 minutes. Stir to help the mixture gets smooth. Stop the heat and let it cool. Even if there is still pieces, with the heat, it will melt.

Separate the yolk and the white of the eggs. In a bowl, with the yolks, add the sugar and mix very well together till it gets whitey and foamy. Add the flour and mix well again.
Add the chocolate cream and mix well.

Whisk the white eggs with a pinch of salt till they get really stiff. Add them delicately to the chocolate mixture trying to cover them lightly. If you are too quick, you will break the foamy eggs and your cake will not get up and will not have this spongiest texture we like so much!

Crush roughly the nuts and add them to the preparation.

In a rectangular oven tray spread with butter, pour the mixture and put in the oven for 20 minutes. The cake should be still smooth. Take it off the oven, let it cool unmold and cut in squares. I decorated them with some walnuts on top fixed with a little bit of melted chocolate....
