Stuffed cabbage meat balls

Stuffed Cabbage Meat ball
Back to 2000, when I was living in Aix-en-Provence, my colleagues an I were used to have a special lunch on Friday in a very small restaurant where the owner became a friend. The cuisine was simple but flavorful and just amazing! 
I will always remember the amazing stuffed cabbage we had there. I still remember since that time. 
I spent the following years, tasting and checking recipes, but never take the opportunity to experiment this marvellous dish till this weekend.

Even if the origin of this dish comes probably from Turkey, we can find infinity of recipes all over the world. Stuffed cabbage is also a really traditional dish from French cuisine very popular in the bistrots.

This is my own creation and use the most usual ingredients we use in France. 

For 12 cabbage balls (4 people), we need:

- 1 small curly cabbage
- 500 grs half- half minced meat
- 1 big onion
- 1 big carrot
- 1 garlic clove
- 100 grs of mushrooms
- nutmeg
- salt and pepper
- 1tbsp of olive oil
- 1 egg
- 1tbsp. grated bread

1/ First clean the cabbage and separate 12 big leaves of cabbage. In a large pan, put some water and boil. Add the leaves for 10 minutes till they get smoother but not too much. Take leaves out and reserve and let it cool.
Keep the water.

2/ Cut thinly the onion and garlic and carrot and mushrooms. In a fried pan, we put the olive oil and the vegetables and let it cook a medium heat slowly stirring always in order that the onion gets translucent.

3/ In a bowl, mix the minced meat, egg, bread crumbs, the vegetables, salt and pepper till the ingredients get together.

4/ Take one leave of cabbage in your hand and place small ball of meat, no bigger than a small clementine. Fold gently the leave and place it on a steam basket. Repeat the operation til you finish the ingredients.

5/ Cook for 20 minutes the stuffed cabbage balls in a steamer. In the meanwhile, you can boil the water where we cooked the cabbage and add some rice for 20 minutes too.

Serve the stuffed cabbage meat balls with the rice and add some French mustard or if you prefer an Asian touch, with some soy sauce! Enjoy!!!! it is just delicious!
