Stephi's beef stew
Ingredients for 8 persons:
- 1 kilo of beef
- 2 carrots
- 1 big onion
- 3 garlic cloves
- 2 bay leaves
- 1 thyme stick
- 250 grs mushrooms
- 150 grs of bacon
- 40 cl of red wine
- black pepper corns
1/ Peel the onion, the garlic and carrots. Slice everything thinly.
2/ In a large pan, pour 2 tbsp. olive oil and the onion. Let it get golden at medium heat for 10 minutes, stirring. Add the garlic.
3/ Add the beef sliced in pieces and let get golden as well. Add the carrots, thyme, bay leave and then salt and pepper. Add the wine and let it evaporate for 10 minutes.
4/ Slow down the heat, add 2 glasses of water, and cover. Let cook for 3 more hours, and add some water if needed.
5/ Let it 10 minutes, sprinkle some sliced parsley before serving with some potatoes or fresh pasta.
I love to cook this one, some cold and rainy day where the best place to be is the kitchen! Stews with a long cooking make the meat more tasty and smooth and the gravy is just soooo flavourful! Enjoy!
