Summer Green Quinoa Salad
Yesterday I cooked for my brother and his flatmate in Paris. I am staying at their place, and cooking is my way to thank them for their hospitality each time I invade the flat and work there. 
It is July finally, and I wanted something fresh and light. Everybody is on diet for summer, so I went to the Turkish shop across the street and start to pick up what appeal me most. I got some nice Spanish green melon, some tiny cucumbers, fresh coriander and mint,... the rest is to be read  below!

Ingredients for 4 persons:

- 400 gr. of quinoa
- 1 cucumber
- 1/4 of Spanish green melon
- 1 lemon juice
- 1 green chili pepper
- 1 bunch of fresh coriander
- 1 bunch fresh mint
- 2 tbsp. of olive oil
- salt and pepper
- 400 gr. of chicken
- 1 tsp. of ginger
- 1 tbsp. of honey
- 1 tbsp. of soy sauce (choose Tamari sauce for a gluten free version)

1/ Cook the quinoa in salted boiling water for 20 min. When it is cooked, drain the water and reserve.

2/ Slice the chicken in small pieces. Cook in a frying pan with 1 tbsp. of olive oil. Sprinkle on top some ginger powder. When it starts to get golden, add the honey, stir and mix well. Cook for 2 more minutes, and finally add the soy sauce.
When the chicken is cooked and golden and like caramelized, take off the stove and reserve.

3/ Cut the melon in small pieces, as well as the cucumber. Add the quinoa.

4/ Slice the coriander and mint roughly. Add to the salad. Pour the chicken.

5/ Add some sliced green chili pepper, 1 lemon juice and 1 tbsp. of olive oil. Salt and pepper. Mix well all the elements and serve.

The mix of the sweet, the spicy and savory is just outstanding! Delicious! It is refreshing and kicking and I heard during the whole evening that it was amazing! It is always wonderful to see people enjoying what you prepared!
