Let's talk about cooking hacks that will make your life easier! Let me share with you a trick to  have the perfect tortilla with no flip and no fry!

 Tortilla is one of the most comfy dish you can find in Spain. I love it for breakfast, but it suits any occasion! In Spain, everybody is able to cook it. 

The secret of the tortilla making is to flip it in the pan like a pancake, except that the pancake is 10 times bigger and heavier.... So a lot of people fear to do it. To be honest, it took years before I risk to flip a tortilla myself!

This do not prevent me to make tortilla tough! And here is one of the easiest tortilla recipe you will ever find! No need to flip it, no need to fry it! This is my little secret for you!

Grilled Courgettes
Ingredients for 4 persons: 5 yolks and 8 white eggs
  • 200 ml of liquid cream (you can use soy cream as well)
  • 100 gr. of fresh goat cheese
  • 1 courgette
  • 1 red onion
  • 2 garlic cloves
  • salt, pepper and rosemary or thyme
  • 1 tbsp. of balsamic cream
  • 1tbsp. olive oil or coconut oil
Turn the oven on 180ºC.

1/ Clean the courgette, peel the onion and slice them. Grill the slices in a pan with 1 tbsp of olive oil or coconut oil and 1 peeled garlic clove. When grilled and golden, reserve.

2/ In a large bowl, mix the egg yolks, cream, salt and pepper. Crumble the goat cheese into the mixture.

3/ Whisk the eggs whites till stiff and add them to the preparation kindly and smoothly in order to get a foamy mixture.

4/ Mix the the eggs with the courgettes and onions.

5/ Take a baking tin, grease the inside with some oil or butter. Pour the mixture sprinkle some rosemary or thyme on top and place in the oven for approx. 30 min at 180ºC.

6/ When your tortilla is golden and a knife come out of the middle cleaned, take the tortilla out of the oven and let it cool.

I usually serve it with some balsamic vinegar cream and a green leaves salad as lunch, but it is also a perfect aperitif/tapas sliced in dices, or even a great brunch dish! You will be amazed by the creamy foamy texture, and the mix of flavors is just perfectly balanced and delicious!

There is a phrase in Spanish saying to flip the tortilla (Dale la vuelta a la tortilla) when you mean to change the perspective of life and make some lifehacks. It is a funny phrase that shows how Spaniards are creative and flexible in life as the tortilla is your pan! 

So no more excuses to not cook a tortilla now! Follow the same technique with the original recipe with potatoes or create your own version. And do not forget, that if you find an obstacle, just flip the tortilla! There is always another path, another solution, another way!
