Tapioca and cherry pudding

Who does not love a nice and refreshing dessert? or snack,... or breakfast! This easy recipe can be made in advance and is so versatile, you can have it any time!

Ingredients for 4 persons:

- 1/2 cup of fresh cherries, de-boned
- 1 can of coconut milk
- 1/4 cup of tapioca pearls
- 1/4 cup of Chia seeds
- 4 tbsp. of honey

1/ First cook the tapioca pearls for at least 20 minutes in boiling water, till they get glutinous and translucent.

2/ Drain and reserve.

3/ In a bowl, put together the Chia seeds, tapioca and coconut milk. Add the honey and mix well.

4/ Clean and de-bone the cherries. mash half of them with a fork and add the cherries to the mixture.

5/ Pour the pudding in 4 or more serving cups. cover and let it in the fridge for at least 30 min. I pick up jam cans. They are super handy for a snack on the go, and they are recyclable! Do not fill them up till the top, but up to 3/4.

6/ Serve fresh with a leave of mint on top. My first idea was to have it as dessert, but, I had the leftovers cups as breakfast! And it really rocked! A great way to start the day by indulging yourself. I love the mix of the pearls and seeds with their very special texture.

I would recommend to try it with some extra spices: nutmeg, cloves, cinnamon and liquorice powders! It is a wonderful kick!!!!
