Meatless Loaf for thanksgiving with red beans

I had been thinking of this meatless loaf for several weeks, and I finally gathered all the ingredients and experiment!

The result is just amazingly delicious! Even my mum was stocked by the taste! It is really addictive and actually we had it during the whole week, with different sides and dishes, and I never got bored! Which is a kind of challenge to me. I cannot stand to eat twice the same dish most of the time.
 


 One part of the magic happens thanks to the celery and the mix of carrots and mushrooms with the soy sauce. You get a true meat taste.

 
Ingredients for 4 persons:
- 1 big yellow onion
- 2 garlic cloves
- 500 gr. of cooked red beans or black beans
- 4 celery sticks
- 2 carrots
- 1 tbsp. of chia seeds
- 1 tbsp. of concentrated tomato paste
- 3 tbsp. of soy sauce or tamari if celiac
- 4 large button mushrooms
- 3 sprigs of thyme
- 3 bay leaves
- 1 sage sprig
- 3 tbsp. of olive oil
- salt and pepper

Chia seed egg
1/ First blend the chia seeds with 3 tbsp. of water, and let sit in the fridge for 30 minutes.

2/ Cut the onion, garlic, carrot and celery in tiny pieces and stir fry for 15 minutes with olive oil at medium heat till you get a flavorful and golden veggies.

3/ Add the mushrooms brushed and cut in 4, and cook them 5 minutes. Add then the red beans and mix well all the ingredients in the pan.


Meatless load mixture

4/ Add all the herbs, salt and pepper, cover and let it cool down.

5/ When it is cool, mix well with chia seed mixture till you get a kind of dough. Put in an oven mold, sprinkle just a little bit of olive oil on top and put in the oven for 30 minutes at 180C.




6/ Enjoy warm or cold as a meat loaf. It is a perfect option for thanksgiving either as a stuffing or as turkey replacement for the vegan and vegetarian guests.
