Summer barbecue chicken curry and its refreshing herbs yoghurt sauce!

This is a very nice, tasty recipe ready in 15 minutes! So no more excuses to not eat healthy and yummy!
Ingredients for 4 persons:
- 4 chicken fillets
- 2 tsp. of curry powder
- 1 garlic clove
- 250 ml of Goat yogurt (you can perfectly use a normal plain yogurt, with a preference for a Bulgarian type yogurt)
- 10 fresh mint leaves
- 1 handful of fresh coriander
- 1 handful of almond
- salt and pepper
First, cut the chicken in dices and cover them with the curry powder. Place them on skewer and cook it on the barbecue or a grilled pan for 10 minutes at medium heat till the chicken is golden everywhere.
In a small bowl, put together the goat yogurt, the crushed garlic clove, salt and pepper. Mix properly and than slice thinly the fresh mint and coriander, crush roughly the almonds and top the yogurt sauce.
Serve with the chicken! I love this recipe really quick and easy to make! You can have it warm or cold and the sauce is so refreshing that the spices melt in it!
Enjoy it with a nice spicy rosé from Provence!
