Carnival, Shrove Tuesday and candelmas must have: pancakes

The winter is ending (or should), and one of my favorite time of the year is coming with the ball of candelmas, carnival and shrove Tuesday, all ancients celebrations honoring the welcome back to the good weather and the sun!
French are especially well-known everywhere in the world thanks to the crêpes, our so-called pancakes!
Some years ago, I shared with you my recipe for the perfect French pancakes that is the first step for an amazing party! You can find the recipe here.
Now that we have the basics, let's imagine some yummy alternative to make a full diner with pancakes!
Here are some of my favorites:

And I tried a new one this year, inspired from my pumpkin quesadilla recipe that you will really love! A fusion of winter and sun!
You need 2 crepes, like if it was a quesadilla.
Grilled a small pumpkin in the oven. You just open it in 2, take off the seeds and roast it 30 min at 180ºC, skin on top.
Take the first pancake. Mash the cooked pumpkin on top of it. Add 1 crushed garlic, salt, pepper and oregano.
Then slice a mozzarella on top, drizzle with some olive
oil, and cover with the second pancake. Grill in a fried pan or in the oven till the cheese melt.

Serve with some greens on top and add some Tabasco or chili sauce if you want a spicy one!
I really love the mix of the sweet winter comfy pumpkin and the strong oregano flavour with the melted cheese,... delicious!!!
