Asparagus salad with Mimosa eggs

Asparagus seasoned is launched, and I have to say I was waiting for it!!!! White or green, I really enjoy it! This is a delicacy!

This first recipe is quite traditional and it is always nice to to start with a good old recipe!
Ingredients for 4 persons:
  • 4 Eggs
  • 8 big white asparagus 
  • 2 tbs. of mayonnaise
  • 1 coffee spoon of curry
  • Tuna (1 can of 110 grs.)
  • 1 handful of parsley
  • Salt and pepper
1/ Peel the asparagus and cut the bottom. Boil some water in a large pan with a pinch of salt and the lemon juice. Put the asparagus for 5 to 10 minutes till they get smooth. Drain and reserve.
2/ Hard boil the eggs (12 min). Peel the eggs when ready.

3/ Then cut the eggs in the vertical way and take off delicately the yolks. 
Reserve 2 whole yolks on a plate as well as small bunch of parsley.

In a bowl, put the others yolks together, add the mayonnaise , curry and the tuna and a handful of parsley thinly sliced.

Mix it well and stuff the white part of the egg with it.  

4/ In a plate, place the asparagus and the eggs. Top the eggs with the grated yolks reserved in order to create a kind of yellow snow. Put a small bunch of parsley on each egg.
