Grilled Mediterranean Gambas Tapas

This weekend I was thinking about barbecue,... the weather helped, and I suppose that at that point, my whole body and soul is craving for anything that sounds, looks or smells like summer! For the first time in all these years living in the Netherlands, I found myself even more Dutch than the locals, getting profit of each ray of sun when it appears.

So this weekend, I was sipping some of my best rosé wines I found for my wine tasting, and from a sudden, an old memory from Madrid came out,.... my marinade gambas!

Let me share the recipe with you! It is easy and simple, and will bring some sun in your plate! 
Ingredients for 4 persons:
- 8 or 12 tiger prawns raw if possible
- 1 lemon
- 1 garlic clove
- fresh thyme
- olive oil
- salt and pepper

1/ In a tray, place the prawns, add the peel of the lemon and its juice, the thyme, the whole garlic clove peeled and olive oil. Make sure that the prawns are properly covered with the ingredients. 

2/ Cover and let marinade in the fridge for at least 2h. 

3/ After this time place the tray in the oven or on the grill and let the prawns for 10 minutes. You can also put them on a skewer to help with the service before grilling.

4/ Eat warm or cold. The flavors of the lemon and thyme are really present and strong, and it is just delicious! Perfect for an appetizer (tapa) or starter, and of course absolutely amazing for your barbecue season!

Now just close your eyes,... Can you see the blue Azur sky and Mediterranean sea in front of you? Here you are! And to pair with this amazing dish, nothing better than a Côtes de Provence Rosé wine!
