How to make Stephi's Tabouleh

One of my basics recipe, easy and quick,... it's not summer time, but today, I feel like eating sun light!
 Ingredients for 2 persons:
  • 200 gr. Couscous
  • 3 ripe and juicy tomatoes
  • 2 cucumbers
  • 10 mint leaves
  • 1 lemon
  • Olive oil, salt and pepper, tabasco

1/ In a bowl, put the couscous grains and  add thinly diced the tomatoes and cucumbers. It’s important to try to use all the juice of the tomatoes and not waste it.

2/ Then add the juice of 1 lemon, 3 spoons of olive oil, salt and pepper.

3/ Mix everything, put a cover and let it in the fridge for 30 min at least.

4/ Just before serving, mix the tabouleh, adjust the seasoning, and add thin slices mint leaves. You can put a little bit of Tabasco if you like a spicier taste.

You can make a lot of kind of tabouleh with this basis, adding other fresh herbs, change the lemon for lime, or put tuna, anchovies, boiled eggs to get a full dish.
For a sweet taste, you can put some raisins,… but It is not my favorite choice!
