Vietnameses Grilled Fish





The easiest recipe we did in Vietnam! And it so delicious, that you just have to try it and travel to Vietnam and Hoi An!!!!
The original recipe use banana leaves and grill,… you can change the leaves for aluminum wrap and if it is not the barbecue time, you just can use the oven!

Ingredients for 4 persons:

- 1 snapper or Dorado fish
- 3 stems of lemon grass
- 3 garlic’s cloves
- 1 ginger root
- 1 shallot
- 1 small of spring onion
- Sugar and pepper
- 1 lemon juice
- ½ tsp. of salt
- ½ tsp. of sugar
- ½ tsp. of black pepper

1/ First do some pockets to the fish. For this, you have to cut the fillet in the middle bone and open it following the bones. Repeat the surgery on the other side.






2/ Then we prepare the stuffing.

In a frying pan, you fry with some vegetable oil and ½ spoon of butter the spring onions and the shallot. When it is roasted, take it off the heat and put it in a bowl and add the finely sliced lemon grass, the crushed garlic and ginger.

3/ Season it with a pinch of pepper and sugar. Mix it properly and stuff the fish with it!


4/ Place the fish in aluminum paper and wrap it.
Put it 20 minutes in the oven at 210ÂșC.

5/ To serve it, we prepare a sauce with the lemon juice, salt sugar and pepper and you top the fish with it.

You can serve it with some steamed rice topped with the sauce!
