How to make a Spanish Tortilla

Before Easter weekend, we had a "multi kulti" lunch at work! Everyone brought some special dish and we all eat together around this fabulous buffet!
It was really nice to share gastronomy recipes and have a really nice and relax meal together!
I decided to bring a Spanish Tortilla! And I was asked the recipe, so, we will try to to give it!
Ingredients for 4 persons:
- 4 big potatoes
- 1 onion
- 6 eggs
- Spanish olive oil
- salt and pepper
1/ First peel and slice the potatoes as well as the onion. Then deep fry it in a pan hardly covered with olive oil!
2/ In the meanwhile, mix together the eggs in a bowl and add salt and pepper.
3/ After 10/15 minutes, when the potatoes are quite ready, take them off from the pan, put them with the egg mixture and keep the oil in some bottle.
4/ Take again the pan, and with really little olive oil, spread the tortilla in on a medium heat and let the tortilla to get cooked.
5/ After 5 minutes, when it's quite cooked and just still have some liquid on the top, but the rind is already fine, take it off from the heat, cover the pan with a plate, and really carefully (I would recommend to do it above the sink), turn the tortilla up side down on the plate.
Then we put the tortilla again in the pan in order to let the other side to be cooked. It will take 2 minutes for the tortilla to be ready!
Reserve it, and eat it sliced in small squares, hot or cold, with pan tumaca, piquillo peppers, or mayonnaise!
The recipe is quite easy, and the only trick is to turn up side down the tortilla! But it´s really manageable, so try!
