Fusion Risotto!

Fusion Risotto with salmon by Appetit VoyageMy boyfriend has some trouble to get asleep sometimes, and he hardly not slept on Sunday night! The day after, he was feeling so bad, that I wanted to do something to make him feel better,... on Monday afternoon, I search on Internet what kind of food is good to have a good night,... vegetables, legumes, carbs but no meat or dairy products.
So I went home, and start to look in my fridge and cupboard what I can use for the diner,... The day before, I prepared some lentils and we bought some fresh salmon fillet,...

The result is a onion risotto with lentils and mushrooms with a grilled Japanese style salmon! The mix was really interesting and we enjoyed it!

Here is the recipe for 4 persons:
- 2 onions
- 2 small glasses of round rice
- 100 gr. of button mushrooms
- 3 tbsp. of cooked lentils
- 1 glass of white wine
- 350 gr. of salmon fillet
- 1 lemon juice
- Soy sauce or tamari sauce
- sesame seeds
- salt, pepper and laurel


1/ First, prepare a marinade for the salmon with 1 lemon juice and soy/tamari sauce. Put the salmon in a closed plastic tray and let it out of the fridge for 15 minutes. If you have more time, you can keep it in the fridge, and then let it for 30 min/1h. Try to give the box a shake from time to time in order to mix properly the salmon with the marinade!

2/ In a fried pan, put the thinly slices onion with a spoon of olive oil and grill them with a medium heat. Once the onions are grilled, add the rice with one more spoon of olive oil and stir it for a couple of minutes, till the rice gets translucid!
3/ Then, add the white wine and let boil off, then cover the rice with water, add salt and pepper and a couple of laurel leaves. Cover it and let it cook for at least 20 minutes.

4/ In the meanwhile, grill the sliced mushrooms in another pan.

5/ In a baking pan, put the salmon with the marinade, and add on the top 1 tsp. of sugar and sesame seeds. Then put the salmon on the oven at 200ÂșC for 30 minutes till it is grilled, and the marinade turns into a kind of caramel!!!

6/ After this time, the risotto, should be ready, so add the mushrooms and the lentils.

Serve in a plate the risotto topped with the salmon fillet,... it´s really, really good!!!!
