How to make a Cherry Clafoutis
This is cherry time!!!! The season for the heart shape and delicate fruit is really tightened so let's enjoy it! Fresh, or cooked, it is always delicious!
One of my favorite recipe with cherry is a clafoutis!
What is a clafoutis?
It is a traditional dessert in Limousin region in France and, basically it is a kind of pancake dough cooked in the oven with fruits. Cherries, apricots are the most famous ones, but you can imagine all kind of fruits!
This is my own recipe: quick, easy and always perfect!
Ingredients for 6 persons:
- 100 gr. of wheat flour
- 200 gr. of sugar
- 500 gr. of pitted fresh cherries
- 70 cl of semi-skimmed milk
- 4 eggs
- 4 tsp. of almond powder
- 1 pinch of salt
- 2 tea spoons of baking powder
- extra:2 tsp. of dark chocolate chips
First, turn on the oven to 200ºC.
1/ Wash the cherries and take off the pit. You should have 500 gr. of pitted cherries.
2/ In a bowl, get together the wheat flour, the sugar, the salt and the baking powder. Mix it with a fork and make sure the powder is thin.
3/ Add little by little the milk and stir in order you get a smooth mixture. Then add the eggs. Mix well together.
4/ Besides, mix your cherries with the almond powder and add it to the milk mixture.
5/ Add the chocolate chips if you want an extra sweet and sexy twist!
6/ Butter the inside of a baking tray or muffin tray and pour the mixture making sure the cherries are well spread all over the tray.
7/ Put in the oven a 200ºC for 30 minutes.
Enjoy cold and serve with some vanilla ice cream of chocolate sauce. You can also easily freeze it and have it ready in advance! This is a great dessert for summer and picnics, or even for breakfast!
