Easy Prawn Wonton's Soup

This is a very easy recipe that will give you an Asian twist to your diner!

Wontons are a kind of Chinese dumplings you can find everywhere in the country with thousands of different recipes and filling. Though, it is my Japanese friend, Misa who taught me how to cook them a lot of years ago. I found them in Vietnam, Indonesia, Japan,.... This recipe is inspired from the Thai soups and it is really enjoyable now in winter!


Ingredients for 4 persons:
- 1 package of wonton pastry foils
- 400 gr. cooked prawns
- 1L of veggies broth
- 4 fresh lemongrass
- 2 garlic cloves
- 2 spring onions
- 40 gr. of ginger
- 1/2 red chili pepper
- 1 lime juice
- 1 handful of fresh coriander
- salt and pepper
- 1 tbsp. olive oil

The wonton foils are a small squared package you can easily find fresh  in Asian groceries.

1/ First prepare the broth. In a pan, place the sliced garlic, ginger, spring onion and 2 lemongrass with the head of the prawns and 1 table spoon of olive oil. Fry for 5 minutes stirring and then add 1L of water, add the veggie broth cube, salt and pepper and the sliced chili pepper and let boil.

2/ In the meanwhile, prepare the Wontons. Take one foil of Wonton and place in the middle, one or two peeled prawn. 

Wet your finger with some water and mark the edge of the wonton. Fold the square, making a triangle folding the 2 opposite diagonal corners. 

Press the border with your finger in order that the ravioli close. 
Place the Wonton on a plate. Repeat the operation and place the new one next but without touching the other. Count around 3 to 4 Wontons per person.

3/ Slice thinly the remaining onion spring, lemongrass, chili pepper and coriander.

4/ In the boiling broth place the Wontons till they come back to the surface, serve in a bowl and sprinkle the mix of spices on top and some slices of lime a part.

This is a hot and spicy broth, quite light though that will really light up your winter evenings! Enjoy!
