Fabulous Stephi's Pumpkin Pie for thanksgiving,... or everyday!

Stephi's Pumpkin Pie Thanksgiving
Pumpkin pie is like a monument to the American Thanksgiving celebration!  
So much that I never dare to try,... but then I have so much pumpkin home that I really needed to be creative. 
Sweet pumpkin recipes are just so attractive to me; the flavor of this fruit mixed with spices like cinnamon, cloves and anise turns it into warmer, cozy and Fall so much better!


This is my own interpretation of pumpkin pie with homemade crust and homemade pumpkin puree of course! I hope you will like it!

Ingredients for 6 persons:

- 900 gr. of cooked pumpkin
- 200 ml of liquid cream
- 1 tbs. of heavy cream
- 1/2 tea spoon of cinnamon
- 2 crushed cloves
- 1/4 tea spoon of nutmeg
- 1/4 tea spoon of anise
- 1 lemon peel
- 3 eggs
- 150 gr. speculaas cookies
- 250 gr. of butter
- 4 tbs. of agave syrup

Turn on the oven to 180ÂșC.

1/ First, cut the pumpkin in wide slices. Take off the seeds and fibers inside. Steam the pumpkin for 20 minutes. Pinch it to check the flesh is tender. Let it cool and peel the pumpkin.

2/ Get the speculaas cookies in a bowl and crush them with a spoon back or put it in your food processor for 20 seconds till you get a powder of speculaas. Melt the butter and pour it on top of the cookies crumbs, mix and place in the bottom of your baking mold. 
Place the mold in the fridge for 15 minutes at least.

3/ In the meanwhile, get together in a bowl the eggs, cream, spices, the agave syrup, the lemon peel and mix till it gets totally smooth.

4/ Mix the pumpkin flesh into a smooth puree and pour it in the bowl with the egg and cream mixture and mix together.

5/ Take off the speculaas crust from the fridge and pour the the pumpkin mixture and put in the oven for 40 minutes.

6/ Check that the centre of the pie is cooked pinching it with a knife. If it comes out clean, the pie is ready! 

Let it cool and serve with some whipped cream and caramelized nuts,... it is just delicious! 

The mix of texture of the crunchy crust and the cream and spicy pumpkin is just wonderful!!!! 




It is quite close to the American pumpkin pie served for Thanksgiving too, so just try it and enjoy!
