Brocoli Soup

Stephi's Broccoli Soup
This is a simple soup that you will love and will warm your cold winter evenings! It is also really quick and easy to prepare!

Ingredients for 2 persons:

- 1 broccoli
- 4 potatoes
- salt and pepper
- 20 grs. of butter
- a small piece of chorizo

First peel and cut the veggies. Put them together in a pan, add 1.5 l of water, salt and pepper and let it cook for 20 minutes.

When the vegetables are cooked, blend it till you get a smooth texture. Add the butter, let it melt.

In a fried-pan, put the chorizo cut in tiny dices and let it fry with no added fat for 5 minutes. When the dices are well cooked and crunchy, reserve.

Serve your soup in nice glasses and spread on top the dices of chorizo! Enjoy! 

The smooth and creamy texture of the soup thanks to the potato and butter will contrast with the crunchy of the chorizo when the plain flavor of the broccoli will be enhance by the strong taste of the Spanish sausage.... delicious!
