Goaty and tomatoes tart

Stephi's Goaty Tart
I invited my neighbours for an aperitif this week and wanted something quick and quite Frenchie. I had some fresh goat cheese in my fridge, so I just put it together with small tomatoes and turn it into a nice tart. 

Let's make it together!
 
For 4 to 6 persons





For the dough:
  • 250 grs. wheat flour
  • 1 dl of olive oil
  • 1 dl of hot water
  • 1 tsp. of baking powder

For the filling:
  • 100 grs. fresh goat cheese
  • 100 ml of liquid cream
  • 6 eggs
  • salt and pepper
  • fresh thyme 
Turn the oven on at 180ºC.
 
1/ For the dough, just gather all the ingredients in a bowl you can hermetically close. Then shake it 2 minutes. Open: your dough is ready! I haven't found an easier recipe than this one! It is an old trick I use for 20 years!

2/ Once your dough makes a bowl, just put it in a 28 cm large tart tray. You do not even need a rolling pin. Only with your fingers, you can spread the dough on the bottom and make your crust. Then cover with a oven paper. Put some dry beans on top and put it in the oven for 15 min at 180ºC.

3/ In the meanwhile, prepare the filling. In a bowl, put together the eggs, cream salt and pepper. Stir well till all the elements are well mixed. sprinkle the fresh goat cheese with your finger in the mixture. Mix well.

4/ Wash the tomatoes, cut them in 4 and take off the flesh and seeds inside.

5/ Once your crust is golden, take it off the oven. Add the goaty mixture on top, make sure the goat cheese chunks are spread all over the tart. Put the tomatoes petals on top placing them as around to make a kind of flower. Sprinkle the fresh thyme leaves on top and put it back to the oven for 20 minutes.

6/ When the tart is golden, take it off and let it cool. Serve with some greens or for aperitif in small pieces. The combination tomato-goat cheese-thyme is one of my favourite!
