I definitely love the mix between chocolate and cherries and I had these preserved cherries with their granat amazing juice for a long time in my pantry, waiting for a special occasion!
I used one of my recipe you can found on my blog, the chocolate coulant, and adapt it a little bit.
Ingredients for 2 persons:
- 100 gr. of chocolate with 70% cocoa
- 1 egg
- 25 gr. of butter
- 1 tbs. of wheat flour (or almond meal for a gluten free version)
- 180 gr. of preserved cherries
- 2 tbsp. of cherry liquor
- Whipped cream
1/ First of all, let's prepare the cherries. In a small pan, I gathered the drained cherries with only 1 tbsp of their juice, and the cherry liquor. The most well-known and easy to find cherry liquor is Kirtsch, but you can locally probably discover some nice other liquors. I chose a homemade one, brought by a friend. It is like a syrup, quite thick, sweet and with a strong cherry flavor.
2/ Cook for 10 min at medium heat till the liquid gets into a thick syrup and the cherries are a little bit dry. Let it cool and reserve.
Turn on the oven to 180 degrees C.
3/ Melt the chocolate with the butter at low heat. Stir in order to make it melt quicker. Reserve.

4/ In a bowl, mix the egg and the flour together. Add the melted chocolate.
5/ Take individual molds, butter them and add some flour. Pour 1/3 of the mixture. Place a spoon of cherries in the middle and cover it with the rest of the chocolate mixture.
6/ Put in the oven for 10/15 min no more! Take out the cakes and let it cool for 10 min.
7/ Place the cake on plate, top it with whipped cream and the rest of the cherries. Sprinkle some icing sugar and cocoa powder. I also added a pinch of cocoa nibs to give it a crunchy touch.
I know it is quite far away from the original Black Forrest cake, but in a very short time you can get a delicious and sensual chocolate cake!
The mix of flavors between the chocolate and the cherries is just amazing and you can create a porn food presentation that will make it irresistible! A very sensual idea for a romantic dinner, isn't it?
