Winter Quarka Cotta
Now that I have this amazing Chestnut cream in my fridge, I just can´t stop to think about new combinations to enjoy it!

This special recipe is really like a concentration of healthy, wintery and French regional dessert! So I am just really excited to share it with you! I hope you will like it!


Why is it healthy?
Cecilia Götherstrom, nutritionnist from Ahimsa & Satya drove my attention to mix blueberries and cardamoms to create an explosive mix to rejuvenateboost natural killer cells and help to fight against cancer! This recipe is totally dedicated to Cecilia who inspires me everyday and turn my life healthier and funnier!

Why is it wintery? Chestnut cream is first a winter spread that will make you feel satisfied and comfy. 

Why is it close to the French Regions and traditions? Well, Mont Blanc is a traditional dessert based on cream and chestnut spread. Blueberries are also typical in Savoy when chestnuts are usually coming from Ardèche, and the quark is definitely a specialty in Rhône. So this is a dessert inspired of the surrounding regions of my parents' place, mixing together the best of each part! 

For all these reasons, this recipe has a special place in my heart,... The quarka cotta idea, even if it is a little bit longer to prepare than a normal panna cotta, it is lighter, and so perfect as dessert base!

Ingredients for 4 persons:

  • 50 cl of soy cream
  • 300 gr. of quark 
  • 85 gr. of agave syrup
  • 4 gr. agar-agar
  • 4 cardamom seeds
  • 120 gr. of blueberries
  • 4 tbsp of homemade chestnut cream

1/ In a pan, we put the cream, agave syrup and the opened cardamoms in order that the small grains can mix with the cream. 

2/ Heat slowly till boiling.
3/ Then take the cream off the stove, and let it cool with a cover. The cardamom will just infuse the cream slowly.

4/ After 15 min, drain the cardamoms off and boil the cream again. Add the agar-agar and let it melt in the hot cream, stir for a couple of minutes and let it cool.

5/ Pour your quarka cotta in individual glasses or bowls.
Keep it in the fridge for at least 30 min.

6/ For the service, just add a spoon of chestnut cream on top and sprinkle some blueberries.

The mix of textures and flavors is really amazing! The delicate taste of cardamoms goes perfectly with the chestnuts and blueberries. The firm quarka cotta and the chestnut cream texture play very well together. And finally, I just love the mix of the fresh blueberries with the chestnut. A pure enjoyment!
