Gluten free and delicious Banana Bread by Stephi
Banana bread is another traditional American recipe, I wanted to bake for a long time and find a healthy but delicious alternative that Cecilia will love too. I finally got plenty of ripe bananas at home, so I decided to give it a try!
Ingredients for 1 loaf:
- 3 ripe bananas
- 3 eggs
- 130 gr. of rolled oats
- 1 pack of baking powder
- 1 pinch of salt
- 100 ml of soy milk of almond milk
- 1 lemon juice and peel
- 3 tbsp. of apple syrup (appelstroop in the Netherlands)
- 30 gr. of grated coconut
- 20 gr. of coconut flour
Turn on the oven to 200ºC.
1/ Put in the blender all the dry ingredients: rolled oats, baking powder, coconut flour and grated coconut . Mix properly and turn the oats in powder as well. Put the mix in the bowl.
2/ In the blender, put together the milk, eggs, apple syrup and bananas. Blend till smooth and then add to the dry ingredients.
You can choose an kind of milk, it will work
3/ Add the peel and juice of a lemon, and mix well.
4/ Pour in a tin and cook in the oven for 25- 30 minutes at 200ºC. When pinching the bread with a knife, it gets out clean, it is ready. Let it cool down.

You can also choose to bake them in muffin mold and get some ready-to-go breakfast for the week!
It will be much better the day after, when all the flavors had time to melt together. You can also freeze it.
But what I really love from this recipe is the mix of the exotic flavor: coconut, banana and lemon, the moist texture and the rich and satisfying taste! Absolutely amazing!!!
