Later, my brother, the cheese fanatic of the family, introduced the grilled camembert which is now a tradition as well! It is really easy to make and you get a small camembert fondue in 15 minutes!
BBQ is a must for most of us in summer. It is a great way to celebrate the good weather and get together with friends and family around a simple and kind of root cuisine.
When I started to travel and live abroad, I had the chance to share amazing and different BBQ with wonderful friends. For me BBQ is synonymous of laughs and caring.
Some of my best memories, are in Spain with my friends! During the weekends in summer, we were used to organize BBQ in the countryside around Madrid, in some summer houses in the sierra mountains, where the tinto de verano (a mix of red wine with lemonade), and we started with delicious chorizo and all kind of sausages, pork chops and côte de boeuf, veggies,... it was usually too much food.

Some weeks ago, I was celebrating the National Day in Oslo with nice Norwegian guys who invited us for a BBQ. It was funny to try another kind of BBQ with Frankfurter sausages and grilled pork served with some potatoes salad.
There is so much different ways to enjoy grill and summer, I thought it could be nice to share some tips and recipes from all over the world!!!! Plus, it will give you some nice side dishes ideas to balance your summer parties and stop feeling guilty!

1/ BBQ ideas to change from your burger and frankfurt!
I collected some of my recipes here, to give you some ideas to change your BBQ. All my recipes are quick and easy.
Stephi's spareribs, one of the last recipe I published, that really blew my mind! I had to remind it! A delicious recipe with complex flavors that will require a little bit of marinade time.

Alessandro´s inspired burgers: my friend and earlier flatmate Alessandro is one of the person I feel blessed to met in Haarlem. He is Sicilian and transmitted me the love and respect for the Italian cuisine . Besides the fact that Alessandro is a talented lighting artist, he is also a great cook! His delicious polpettone (meatballs) inspired me to create a Sicilian taste burger; quite amazing!
Ingredients for 4 persons:
- 600 gr. of minced beef
- 2 eggs
- 1 tbs. of small capers
- 1 lemon peel
- 1 red onion
- 1 garlic glove
- 1 tbs of olive oil
- salt and pepper
- 1 handful of fresh oregano
1/ Peel the lemon, slice in thin dices the onion and crush the garlic clove.
2/ Mix together these ingredients with the meat and eggs, add the capers, oil, salt and pepper and the roughly sliced oregano.
3/ Make 4 patties, brush with some olive oil and grill. Cook as your taste and enjoy straight away! You can make a nice Italian burger with it choosing ciabatta bread, olive oil, tomatoes, rucola and a slice of mozzarella on top.

Australian style bbq chicken: another inspired recipe coming from another of my flatmate, last year.
1/ First marinade chicken wings with olive oil, paprika pimiento de la Vera and cayenne pepper powders with crushed garlic and thinly sliced onion, oregano, salt and pepper.
2/ Keep it in a plastic box for 1h in the fridge with the wings properly wrap with the mixture. Give it a shake from time to time to spread well the mix.
3/ Grill for 20 minutes and enjoy with the fingers!

Something I always miss during the BBQs is some greens and refreshing side dishes to enhance the grilled meat and fish. I pick up some of my favorite recipes to balance the big meat bbq!
Papas Arrugas, some Spanish traditional dish that will go with everything!
Tabouleh and tabouleh festival variations , of course, one of my best recipe, quick, easy and refreshing!
Japanese salad , a great and different salad to change full of Asian flavors!

More cold soups with the traditional Gazpacho or other variations of gazpachos
Provencal Tian, this is a very French dish, just veggies!

A perfect BBQ dessert: Grilled Bananas
Really quick and easy to prepare!
- 1 banana per person
- 1 tbsp of raw sugar or maple syrup
- 1 tbsp. of rhum (facultative)

1/ Open vertically the peel of the banana and slightly open it but keep the banana in its peel.
2/ Pour the sugar/syrup and rhum carefully.
3/ Grill for 10 minutes till it starts to caramelized. Enjoy with a nice rhum and raisin or coconut ice cream!
