Scandalous Red beans brownies
Red Beans Brownies |
I had been challenged a couple weeks ago by Cecilia Gotherstrom to turn a black beans cake into a gluten free version! Actually, you can use red, black or white beans for the recipe.
Ingredients:
- 260 gr. of cooked red beans
- 150 gr of maple syrup
- 4 eggs
- 1 packet of baking powder (gluten free if you are celiac)
- 1 tsp. of sea salt
- 1/2 tsp of vanilla powder
- 3 tbsp. of cocoa powder
- 4 tbsp. of almond flour
- 4 tbsp. of cocoa nibs
- 100 gr. of mixed nuts: almonds, pistachios, walnuts, pecan, hazelnuts
Turn on the oven to 180ºC.
1/ Get together in a blender the drained red beans, eggs and syrup. Mix till smooth.
2/ Add the salt, vanilla, almond flour and cocoa powder as well as the baking powder. Mix well again.

4/ Place in the oven for 20 min a 200ºC. When the brownie is perfectly cooked, let it cool down before slicing.
As any chocolate recipe, I would recommend to wait till the next day to enjoy it! Slice in pieces and keep in an air-tight box for 2 weeks in the fridge.
