How to make the magic bananas pancakes gluten and dairy free

What about pancakes for breakfast? What about some gluten and dairy free pancakes made with bananas?

Bananas Pancakes
This recipe is so easy and quick to make, I really find it magic! Seriously, in 15 minutes max, you are done and can have your breakfast.

So let's get it started!

Ingredients for 3 persons (or 2 very hungry ones!):
- 2 bananas
- 4 eggs
- 1/2 tsp. of baking powder
- 1 tsp. of turmeric or/and cinnamon
- 2 tbsp. of rolled oats
- 1 tbsp. of flax seeds
- 1 tbsp. of Goji berries
- 1 tbsp. of coconut oil



For service: I usually love to top my pancakes with fresh fruits and avocado, grated coconut and maple syrup...

Ingredients for the bananas pancakes
1/ In a large high bowl, crush the bananas with a fork.

2/ Add the baking  and spices powders to the mash and mix.

3/ Add the eggs, oats, flax seeds and Goji berries. Blend till very smooth with an immersion blender. Or just make the mixture in your blender. You will get a more liquid mixture than a normal pancake dough, but the oats, flax seeds and Goji will bring consistency.

Feel free to change the oats, flax seeds and Goji by other seeds or dried fruits. Adjust with what you have available in your cupboards.

4/ In a stir-fry pan, put a little bit of coconut oil and warm it quite high. Take a dipper of the mixture and pour it on the hot pan. Turn the mixture around with the pan to make sure to get the same thickness all over the pancake, and perhaps reduce the heat.

When after a couple of minutes the pancake is firm enough to be flipped, cook the other side, 1 more minute. And reserve on a warm plate.

Repeat till the end of the mixture.

You can choose if you prefer small and more numerous pancakes, or if you make a couple of large ones instead.

5/ Serve straight away with your favorite topping. Personally, I always go for a drizzle of maple syrup and some fresh fruit and a sprinkle of grated coconut.

Try with pieces of avocado and the maple syrup, black pepper and lime.... I promise it is amazing!

If, by any chance, you get some leftover, you can keep them as snack or even your lunch! You probably can keep them in air-tight box for some days in the fridge,... but it never happened to me!!! We always finish them straight away... (blush)...
