New baked oats recipe: summer breakfast porridge

Summery Baked Oats Slices
During this winter I shared with you a great quick and easy recipe to get a balanced breakfast on the go with my comfy and sweet spicy baked oats for fall breakfast.

Now the nice weather is back, apples are not that good in more in Europe. The season is off, and instead we start to see fresh berries at the market.

So, I updated the recipe to a more summery one, I hope you will like it as much as the former one!




Turn on the oven to 180 C.

Nuts and seeds mix for baked oats
Ingredients for 4 persons or 4 breakfasts:
 
- 2 cups of mixed rolled oats (choose gluten free ones if coeliac)
- 1 1/2 cup of cashew nuts, hazelnuts, almonds, sunflower and pumpkin seeds
- 3 tbsp. of honey
- 1/2 cup of dried black mulberries
- 1 tsp of dried elderflower
- 1/2 tsp of salt
- 4 eggs
- 2 cups of almond milk
- 1/2 cup of a mix raspberries and blueberries (I got the frozen ones)
- 3 tbsp. of almond flour

Mix everything together except the berries and almond meal. Pour the mixture in a baking tray formerly spread with coconut oil inside. Sprinkle the almond flour on top and then spread the berries. 
I use this technique because, frozen or fresh raspberries have more water and are more moist than apples. So, it tends to make the baked oats more fragile. By adding the little bit of almond flour and placing the fruits on top, we are sure to get a perfect texture!
 
Cook for 20 minutes at 180 C in the oven. Let it cool before slicing in squares.

Now, the great thing is you can prepare it in advance and have it in your fridge or freezer wrapped in a plastic film. Put it 30 sec in the microwave if you are in a hurry, or grill it a little bit in the oven. Personally, I do not have microwave, and usually, I just get my slice out of the freezer either the night before, or even in the morning. It takes 10 minutes to be ready at room temperature! So, if I am really in a hurry, I just grab it and go, and eat it on my way to work!
