Vegan and lazy oats cookies

Do you already have these cookie cravings afternoon during winter? Didn't you find yourself looking for a snack on Sunday afternoon to go with your movie? At home, we do not buy cookies. So either, I bake it or we don't have it!
And then, Sundays are made for laziness and relax... at bit of prep for the week, yes, but sometimes, you just do not feel to spend time in the kitchen, and still feel like have a cookie!
And as I am also demanding, if I have a cookie, it must be healthy! Laziness and cosy afternoon, does not mean you have to cheat on your diet! You perfectly can have it all!
I found this quick recipe that brings all together in less than 20 minutes! No need to have special ingredients in your pantry, and still you can get a great healthy cookie! Gluten free, dairy free and refined sugar free: what else can you ask for?
I found it so delicious and nutritious, that it became my breakfast for the whole week!
Ingredients for 9 large cookies:
- 2 ripe bananas
- 150 gr. of rolled oats (make sure they are gluten free if cealiac)
- 30 gr. of sesame seeds
- 1 tsp. of orange peel thinly sliced or diced, it can be fresh or dry
- 1 pinch of salt
- 1 pinch of yeast
- 1 tbsp. of olive oil
- some almonds to decorate
1/ Turn on the oven to 180C.
2/ Peel and mash the 2 bananas. Add all the ingredients except the almonds and mix well with a fork till it is well blended.
3/ Take 1 tablespoon of the mixture, and roll it into a bowl. Place on a tray with kitchen paper. Press the bowl till you get a nice rounded cookie. Decorate with some almonds on top. Repeat till you finish the mixture.
4/ Put in the oven of 15 minutes till the rind gets golden. Take it out and let it cool. Keep in a airtight box for 2 weeks. It will keep a very gooey texture balanced with the crunchy almonds on top!
5/ I made this cookies in 20 minutes, one Sunday afternoon when I wanted a treat with no pain... and I did not find yet a quicker recipe for cookies! It is the perfect snack and even better breakfast on the go with its large size!
I chose a mix of my favorite flavors: olive oil - orange - almonds!
You can totally create your own combination like:
- cacao nibs + orange + hazelnuts
- almond butter + raisins + nuts
- cacao butter + cranberries + vanilla
- cacao butter + pistachio + dired apricots
- etc.
Flavors and combinations are endless, just adapt to your taste!
