Herbs Soup
A quick and easy recipe for green leaves soup taking advantage of any greens you have!
Ingredients for 2 persons:
- 2 garlic cloves
- 1 potato
- 100 gr. of fresh parsley with the stems
- 25 gr. of fresh kale or rucula or spinach
- 1 tbsp. of virgin olive oil
- 1 celery stick
- 500 gr of homemade chicken stock or veggie stock
- black pepper
- 1 pinch of nutmeg
- 1 tsp. of turmeric
1/ in a pan, stir fry at medium heat the sliced garlic cloves with the olive oil. After a couple of minutes, add the kale and parsley.
2/ When they are soft, add the celery stick in small pieces with the diced potato. Stir again.
3/ Add the chicken stock, the turmeric powder and black pepper and bring it to boil. Let it simmer for 20 minutes.
4/ When the veggies are cooked, blend it till you get a smooth and liquid green soup. If you like, drain the soup through a filter to take away all the strong fibers left.
5/ Serve with a pinch of nutmeg on top and enjoy!
It is simple and I love to do it as well with radish or carrots leaves. The green soup is a perfect Sunday evening dinner after a weekend full of gastronomic discoveries, or just when you feel like having a full hand of green leaves! Feel free to mix and change the veggies!
